This Homemade Enchirito is a saucy, beefy, cheesy dream that brings back all the nostalgia of Taco Bell’s iconic menu item. Made with simple pantry ingredients, it’s a crowd-pleasing dinner that’s easy to whip up.

 Ingredients

  • 1 pound ground beef

  • 1 packet taco seasoning

  • 1/4 cup water

  • 6 medium flour tortillas

  • 1 can (16 oz) refried beans

  • 1/2 cup diced onions

  • 1 can (10 oz) red enchilada sauce

  • 1 cup shredded cheddar cheese

  • Optional toppings: sliced black oliveschopped lettucediced tomatoesgreen onions

 Directions

1. Prepare the filling:

  • In a skillet, brown the ground beef over medium heat until cooked through.

  • Drain excess grease, then stir in taco seasoning and water. Simmer until thickened, about 5 minutes.

 2. Warm the tortillas:

  • Gently heat tortillas in a pan or microwave until soft and pliable.

 3. Assemble:

  • On each tortilla, spread a layer of refried beans, then add a spoonful of the beef mixture.

  • Sprinkle with diced onions and a little cheddar cheese.

  • Roll each tortilla into a burrito-style wrap.

 4. Bake:

  • Preheat oven to 350°F (175°C).

  • Place enchiritos seam-side down in a baking dish.
