🧀 Cheesy Mashed Potato Muffins

Ingredients:

  • 2 cups mashed potatoes (preferably leftover or homemade, not instant)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 large eggs
  • 1/4 cup milk
  • 1/2 cup all-purpose flour
  • 2 tablespoons butter, melted
  • 1/4 cup chopped green onions or chives (optional)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: cooked bacon bits, herbs, or diced jalapeños for extra flavor

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, combine the mashed potatoes, shredded cheese, eggs, milk, melted butter, and green onions.
  3. Add flour, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated. The batter should be thick but scoopable.
  4. Spoon the mixture evenly into the prepared muffin cups, filling about 3/4 full.
  5. Bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  6. Let cool for a few minutes before removing from the tin.

Tips:

  • Use starchy potatoes like Russets for fluffier muffins.
  • You can add extra mix-ins like cooked bacon, herbs, or diced jalapeños for a twist.
  • Serve warm with sour cream or ketchup for dipping.
