🧀 Cheesy Mashed Potato Muffins
Ingredients:
- 2 cups mashed potatoes (preferably leftover or homemade, not instant)
- 1 cup shredded cheddar cheese (or your favorite cheese)
- 2 large eggs
- 1/4 cup milk
- 1/2 cup all-purpose flour
- 2 tablespoons butter, melted
- 1/4 cup chopped green onions or chives (optional)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: cooked bacon bits, herbs, or diced jalapeños for extra flavor
Instructions:
- Preheat oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
- In a large bowl, combine the mashed potatoes, shredded cheese, eggs, milk, melted butter, and green onions.
- Add flour, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated. The batter should be thick but scoopable.
- Spoon the mixture evenly into the prepared muffin cups, filling about 3/4 full.
- Bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before removing from the tin.
Tips:
- Use starchy potatoes like Russets for fluffier muffins.
- You can add extra mix-ins like cooked bacon, herbs, or diced jalapeños for a twist.
