Easy Baked Meatballs

These Easy Baked Meatballs are tender, flavorful, and always a hit! They’ve been a family favorite for years and are perfect for spaghetti dinners, meatball subs, party appetizers, or even enjoyed on their own. Bonus: they’re freezer-friendly, making them a great meal-prep option!

🛒 Ingredients

  • 1 pound ground beef (grass-fed if desired)

  • 2 eggs, beaten with 1/2 cup milk

  • 1/2 cup grated Parmesan cheese

  • 1 cup panko or breadcrumbs (see notes for gluten-free option)

  • 1 small onion, minced or grated (or 1/2 a large onion)

  • 2–3 cloves garlic, minced

  • 1/2 teaspoon dried oregano

  • 1 teaspoon salt

  • Freshly ground black pepper, to taste

  • 1/4 cup minced fresh parsley or basil

👩‍🍳 Instructions

  1. Preheat Oven – Set to 350°F (175°C).

  2. Mix Ingredients – In a large bowl, combine all ingredients. Using your hands works best for even mixing.

  3. Form Meatballs – Roll into golf ball–sized portions and place on a greased or parchment-lined baking sheet.

  4. Bake – Cook for 30 minutes, or until meatballs are cooked through and lightly golden on the outside.

🍴 Notes & Tips

  • Gluten-Free Option: Crushed Rice Chex make an excellent breadcrumb substitute.

  • Mix Smart: Combine all ingredients except the beef first, then gently fold in the meat to avoid overworking it.

  • Flavor Boost: Save Parmesan rinds and let them simmer in your marinara sauce or soup for extra richness.

  • Batch Cooking: Double the recipe and freeze half! Reheat later as mini meatloaves, toss in sauce, or use for subs.

🌟 Serving Ideas

  • Classic spaghetti with marinara

  • Meatball subs topped with melted cheese

  • Party appetizers with toothpicks and dipping sauce

  • Served with mashed potatoes and gravy

Yield: About 24 meatballs
