Meatloaf Cupcakes with Whipped Potato Topping – Comfort Food Made Fun
Classic meatloaf gets a playful twist in these Meatloaf Cupcakes with Whipped Potato Topping. Instead of a traditional loaf, the meat mixture is baked in muffin tins for perfectly portioned servings. Each “cupcake” is then topped with creamy, fluffy mashed potatoes piped on like frosting — making them as fun to look at as they are to eat.
They’re perfect for weeknight dinners, holiday buffets, or even kid-friendly meals where presentation makes all the difference. Comfort food has never looked so cute!
🥔 Meatloaf Cupcakes with Whipped Potato Topping Recipe
Ingredients
For the Meatloaf:
1 lb ground beef (or a mix of beef and pork)
½ cup breadcrumbs
1 small onion, finely chopped
1 egg
½ cup milk
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp salt
½ tsp black pepper
For the Topping:
2 cups mashed potatoes (prepared and cooled slightly)
2 tbsp butter
¼ cup milk or cream
Salt and pepper, to taste
Optional Garnish:
Chopped chives
Shredded cheese
Crispy bacon bits
Instructions
Preheat the Oven
Set oven to 375°F (190°C). Lightly grease a 12-cup muffin tin.
Prepare the Meatloaf Mixture
In a large bowl, combine ground beef, breadcrumbs, onion, egg, milk, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Mix until just combined.
Bake the Cupcakes
Divide mixture evenly among muffin cups, pressing down gently.
Bake for 20–25 minutes, or until cooked through (internal temp 160°F/71°C).
Make the Whipped Potato Topping
While meatloaf bakes, whip mashed potatoes with butter and milk until smooth and creamy. Adjust seasoning.
Spoon into a piping bag fitted with a large star tip (or use a zip-top bag with the corner snipped off).
Assemble the Cupcakes
Once meatloaf cupcakes are slightly cooled, pipe mashed potatoes on top to resemble frosting.
Garnish with cheese, bacon bits, or chives if desired.
Serve & Enjoy
Serve warm with a drizzle of gravy or ketchup on the side.
Tips for Success
Use lean ground beef to avoid greasy cupcakes.
Make sure mashed potatoes are thick enough to pipe — add less liquid if needed.
Prep ahead: Bake the meatloaf portion earlier in the day, then top with potatoes before serving.
For extra flavor, mix shredded cheese into the potatoes.
